Chocolate Cha Cha Chai Muffins

By Shannon Scales

If you've ever had the chance to try one of Lady Baker's chocolate chai muffins you will understand the obsession we have with them. They are the perfect balance of chocolate and spice and have an almost brownie like texture. Fudgy centres and crunchy, crackly tops make these decadent chocolate muffins the perfect treat! Excuse me while I tuck into one...

Chocolate Cha Cha Chai Muffins

3/4 cup milk

1 tbsp Lady Baker's Cha Cha Chai tea

2 cups flour

1 1/2 tsp baking powder

1/2 tsp baking soda

2 tsp all spice

1/4 tsp salt

1 cup white sugar

1/2 cup brown sugar

1/3 cup cocoa

1 cup chocolate chips, divided

2 tbsp butter

1/4 cup sour cream

1 egg, beaten

1/4 cup vegetable oil

1 tsp vanilla

Directions

Preheat oven to 350°F

In a saucepan, heat milk and add Cha Cha Chai tea. Let simmer while you put together the other ingredients (roughly 10 minutes).

Sift flour, baking powder, baking soda, all spice and salt in a large bowl. Mix in white sugar, brown sugar and cocoa.

In a medium saucepan, combine 1/2 cup chocolate chips with butter. Stir over low heat until melted. Strain your tea steeped milk and add the milk slowly into the melted chocolate mixture. Add sour cream, vegetable oil, egg and vanilla to the pot and combine.

Add the liquid ingredients to the dry ingredients and stir in the other 1/2 cup chocolate chips. Stir until well combined.

Spoon in 1/3 cup of mixture into lined muffin tins. Bake for about 25 minutes or until toothpick comes out clean.
